Bacon Wrapped Shrimp with Brown Sugar Glaze



Football Season is here and that means snack foods that are easy to serve to your guests.  My favorite are finger foods that don't require much more than a napkin.  This makes Bacon Wrapped Shrimp perfect. 

Preheat Oven to 425 degrees.

Ingredients

Bacon (1 slice for every 2 shrimp)
1 pound of 16/20 count raw Shrimp peeled and deveined.
Toothpicks (one per shrimp)

Brown Sugar Glaze
In a small bowl combine:

1/2 Cup Brown Sugar
1 Tbsp Spicy Brown Mustard
1 Tbsp Lemon Juice
1 Tbsp of Minced Garlic
1 Tbsp of Water or Bourbon

Line a baking sheet with parchment paper and place a baking rack on top of the parchment.  Add several pieces of bacon to the rack and then brush the bacon with the Brown Sugar Glaze.


Bake for about 6-8 minutes. You want the bacon to start to brown, but you still want to be able to wrap it around your shrimp.

Why do I do it this way? Because, one of the fatal flaws of Bacon Wrapped Shrimp is that in order to get the bacon crisp you overcook the shrimp. By starting the cooking process on the bacon before you wrap the shrimp you solve that problem.
 

Remove bacon from oven and allow it to cool enough for you to be able to wrap the shrimp!

Each piece of bacon will wrap 2 shrimp.  Once the bacon is cool enough to handle you cut it in half and wrap it around a raw, peeled and deveined shrimp.  Put the shrimp back on your baking wrack after they are wrapped.  Once you have completed wrapping all of the shrimp you brush them with more of the Brown Sugar Glaze.

Place them back in the oven for 5 minutes.
After 5 minutes remove from oven, flip them over, add a little more Brown Sugar Glaze and place them back in the oven for 5 more minutes.

At this point you want to check them.  If the bacon is crispy and the shrimp are pink then they are done.  If not, continue cooking until you have achieved crispy bacon and pink shrimp.
